Introduction

Hello and welcome to this training course on Macronutrients in Food Products

Macronutrients are the nutrient substances that are essential in relatively large amounts to the growth and health of a living organism. They are the proteinsfats (or lipids) and carbohydrates we need to keep our bodies moving. Our main source of macronutrients are in the foods we eat.

Micronutrients on the other hand, are the vitamins and minerals necessary to ensure good health. Micronutrients are not needed in the same quantities as macronutrients; however, they are still equally as important. Micronutrients work in tandem with macronutrients to keep the body functioning and are crucial in order to maintain energy levels, metabolism, cellular function, and physical and mental wellbeing.

In this course we will examine the different types of macronutrients used in food products.

On completion of this training course, you will be able to:

  • Understand the chemical structure of carbohydrates, and relevant examples in food stuffs.

  • Understand the formulation and manufacture of some carbohydrate-based food products and applications of starch as a food ingredient

  • Appreciate the functionality of carbohydrates in food

  • Understand the structure of proteins and amino-acids and the functionality of proteins in food

  • Understand the properties and applications of egg proteins

  • Understand the protein composition of milk, properties and applications of commercial milk powders

  • Understand saturated and unsaturated fats and relevant examples in food stuff

  • Understand physiochemical and functional properties of lipids in food

  • Understand manufacture and applications of fats in food industry

  • Appreciate fat replacement in food formulations
